What is Kombucha?

Kombucha is a uniquely delicious bubbly fermented tea elixir with Asian roots dating back over 2000 years.  It is full of living probiotics, enzymes and amino acids that are all beneficial for the digestive system.

An easy way to think about it, is that kombucha is to tea what yogurt is to milk.


How is Kombucha made?

True Büch Kombucha is made by fermenting organic green and black tea and organic cane sugar using a kombucha SCOBY culture (SCOBY = Symbiotic Culture of Bacteria and Yeast).  SCOBYs are made up of good bacteria that work together to ferment the tea for 14 days. 

Throughout the fermentation process, the SCOBY feeds on cane juice and caffeine, and the result is a delicious, naturally fizzy, probiotic drink.

 

Is there sugar in Kombucha?

Our kombucha is fermented using organic cane sugar and organic green and black tea. The SCOBY feeds on the cane sugar and turns it into probiotics. The resulting beverage will always have some remaining fermented sugar in it - approximately 5-7 grams per 8 oz serving.

 

Do you add sugar or other ingredients after the Kombucha has fermented?

We do not add any sugar after the kombucha has finished fermentation. We only add organic tea, organic extracts and organic fruit for flavour.  

 

How much kombucha should i drink?

There is no catch-all recommended “dosage” of kombucha, but we suggest you should start with drinking an 8oz serving of True Buch each day if you are new to kombucha. We are firm believers in listening to your body! It will be key to pay attention to how your gut responds to the live cultures, as everyone will respond differently, and adjust accordingly.

Is there caffeine in Kombucha?

Based on our most recent testing, True Büch Kombucha contains less than 1% of a gram of caffeine per 8 oz kombucha, resulting in minute/negligible amounts of caffeine.

Does your Kombucha contain alcohol?

True Büch Kombucha is a non-alcoholic beverage. There are trace amounts of naturally occurring alcohol present from the fermentation process. Because our kombucha contains less than 1% alcohol, it is considered a non-alcoholic beverage. 

 

How long does Kombucha stay fresh?

As long as it is refrigerated, True Büch Kombucha will stay fresh for 5 months from purchase. Like any carbonated beverage, it may lose some of its effervescence as time passes.

 

Is True Büch Organic?

We use as many organic ingredients as we possibly can. Our kombucha is also vegan, gluten free, and non-GMO. You can check on our label’s  everything with a * is organic!

 

Is True Büch Raw?

Yes, our kombucha is a raw, unpasteurized product. When kombucha is pasteurized (or heat treated), it loses its probiotic content.

 

Does True Büch have a sustainable business model?

We believe so, and that’s why we are so passionate about our product:

  • We sell most of our kombucha in draught form through the use of refillable bottles.

  • All of our waste from the brewing process is composted.

  • Our kegs are repurposed pop kegs that we refurbish and reuse.
